Green lentils can take the place of meat in a range of traditional recipes and give a great texture. They have a mild flavour and soft texture so they go well in casseroles and stews. One 90g serving is a source of Thiamin (B1), Potassium, Phosphorus, Manganese, Iron and Copper.
